tell me about the optocoupler a little bit.

Do both the RX and TX arrive at it? If I were to remove it entirely and put the RX/TX pins of the pi into the entry points of the TX/RX on it.. which pins would I need to put there?

Have a look at the atari st schematic. It's conpletely the same.

While I had done this with a Raspberry PI I decided to try it with an ESP8266 chip, and it ended up being better, cheaper overall, and much simpler to set up.
