Which country had the best ST demo artists ?

I would say France. That country really had a lot of very talented people : Niko, Babar, Krazy Rex, Mic, ATM, C-rem, Goldfinger and so many others. Also i think they really had style and diversity. Your choice ?

There's lots of talented peoples all across Europe.
I don't think it's necessary to sort them by nationality :)

I know this is aimed at Demo's but I think that Henk Neiborg (former Thalion dude) was (is) the best 2D artist to have ever lived. He was dutch.

His first game, Ghost Battle was an ST title.

I don't know for sure if that was his first title, but damn that game looks great. Fun, that's debatable, but the artwork is outstanding. The main character's shocked bulgy eyes ( 8O ) on the title screen was priceless.

the german ST scene had damn good artists too, what about mOdmate/checkpoint, mcfly/risk, agent t/cream, jms/animal mine, carnera/npg

Overall I would say that there were many good artists on the ST at all, it doesn´t matter where they came from. Some of them had a quite unique style that made their stuff more remarkable, the reason for us today to remember especially those guys...

As far as Sweden goes I would say Tanis was good, Red of Omega even better and - shameless plugging - Lobo of Scum of the Earth the best! ;) Lobo beat Red in the 2 bitplane compo at The Computer Crossroads in Gothenburg '93 among other things...

Maybe their professional record will set things straight? I know Tanis worked for Thalion, Red did stuff for that Kula Shaker game and Lobo is still the A.D. of Starbreeze. Anyone who covers the game scene might have more info on this?
